Lesson 1
Preparing the sourdough starter
This lesson will teach you the basics of making a sourdough starter for sourdough bread.

To create a starter, we only need three ingredients: flour, water, and time.

You will learn about choosing flour and the necessary conditions, as well as the steps to create a liquid starter with 100% moisture.
Lesson 2
Saving and renewing the sourdough starter
In this lesson, you will learn how to preserve and renew bread starter, as well as get a scheme for preparing the starter for baking and understand the factors which affect its maturation time.
Lesson 3
Selection of raw materials for bread
This lesson will teach you to understand the importance of quality flour in the bread-making process and its impact on the quality of the final product.

You will take a quick look at the main indicators of flour quality and its role in shaping the texture and flavor of bread.

You will learn about Ukrainian alternatives to quality flour and get recommendations on how to use them.
Lesson 4
Mixing the dough
In this lesson, you will learn how to manually knead dough for wheat bread, learn about kneading techniques and the importance of ingredient temperature.
Lesson 5
Fermentation
In this lesson, we will look at the process of dough fermentation, which is the first major step in fermentation.


You will learn about the optimal conditions for fermentation and how to handle the dough to properly form the gluten backbone of the dough and ensure even fermentation.
Lesson 6
Molding and cold fermentation
The last stage of dough preparation before baking, in which we will check its readiness by several signs.

We will learn how to easily and simply form rectangular and round bread and consider the basic conditions for long-term fermentation.

Lesson 7
Proofing and baking
In the final lesson, we will check the dough after proofing for a number of factors and discuss possible mistakes.

We will consider alternative bread baking utensils and the appropriate methods for each.

We will learn how to cut bread correctly and in which modes to bake it.
